Cold weather has been moving in, and chili is comfort food for cold weather. I made a batch of vegetarian chili tonight. The recipe changes, depending upon what I have available or what I have planned. Sometimes vegetarian chili is loaded with light vegetables, like mushrooms, broccoli, cauliflower, yellow squash or zucchini. Not today. I used onions, garlic, green pepper, red pepper, jalapeƱo pepper, black beans, dark red kidney beans, garbanzo beans, and chili powder, cumin, cocoa, and ground black pepper.
This is a heavier chili, but a much more stout food for stout weather.
